Vegan Buckwheat Groat Salad


INGREDIENTS

1. Buckwheat Groats

2. Broccoli

3. Cauliflower

4. Bell Pepper

5. Celery

6. Carrots

7. Green Onion

8. Cilantro

DIRECTIONS

1. Combine 1 cup of buckwheat groats with 2 cups of liquid. You can use water or vegetable stock. Bring to a boil then lower the heat and let simmer for about 10 minutes until cooked.

2. Chop all of the vegetables very finely, I actually used a food processes. Do not over-process as the veggies will turn to mush (no one wants that)!

3. Combine all of the ingredients into a bowl, dress with balsamic vinegar and lemon juice to taste.
