1. Combine 1 cup of buckwheat groats with 2 cups of liquid. You can use water or vegetable stock. Bring to a boil then lower the heat and let simmer for about 10 minutes until cooked.
2. Chop all of the vegetables very finely, I actually used a food processes. Do not over-process as the veggies will turn to mush (no one wants that)!
3. Combine all of the ingredients into a bowl, dress with balsamic vinegar and lemon juice to taste.
Buckwheat Groats: Contain bioflavonoids which are anti-oxidants that bind to toxic metals and escort them out of the body.
Bell Pepper: Contain the minerals phosphorus and potassium which help with immunity and detoxification.
Celery: Celery is a great food for skin health and fluid balance. The higher the intake of celery, the lower the risk of prostate or breast cancer.
Carrots: Beta-carotene is an anti-oxidant found in carrots. They have anti-aging properties that combat free radical damage and prevent heart disease.
