Vegan Kale & Pesto Cauliflower Bowl


  • Frozen Cauliflower Rice from Trader Joes

  • Italian Meatless Sausage from Trader Joes

  • Mushroom

  • Kale

  • Onion

  • Garlic

  • Pesto

  • Olive Oil

  • Salt & Pepper


  1. Sauté chopped onion, chopped garlic and sliced mushroom in 1 tablespoon of olive oil for about 10 minutes.

  2. Add your sliced Italian meatless sausage and continue to cook in the pan for about 5 minutes.

  3. Add frozen or fresh cauliflower rice and sliced kale to the same pan and continue to cook for another 5 minutes.

  4. Serve this with your favorite pesto (spinach, basil or kale pesto will be delicious).

  5. Top with s & p.
