Vegan Kale & Pesto Cauliflower Bowl

INGREDIENTS
Frozen Cauliflower Rice from Trader Joes
Italian Meatless Sausage from Trader Joes
Mushroom
Kale
Onion
Garlic
Pesto
Olive Oil
Salt & Pepper
DIRECTIONS
Sauté chopped onion, chopped garlic and sliced mushroom in 1 tablespoon of olive oil for about 10 minutes.
Add your sliced Italian meatless sausage and continue to cook in the pan for about 5 minutes.
Add frozen or fresh cauliflower rice and sliced kale to the same pan and continue to cook for another 5 minutes.
Serve this with your favorite pesto (spinach, basil or kale pesto will be delicious).
Top with s & p.
