Lentil Bruschetta Pizza

Have you ever tried the Trader Joe's samples? Well, this recipe came from just that. They had put 2 simple ingredients together (lentils and bruschetta) and I absolutely fell in love. My mind started racing on different and simple recipes I could make from it. This Lentil Bruschetta Pizza is my fiance's favorite meal I make for him. He doesn't know that it only takes 5 minutes to throw together and stick in the oven. He will gladly do any chores the rest of the day (just because of this pizza). If you are someone looking for a hand, make this Lentil Bruschetta Pizza and watch the housework get done :)


  • Trader Joe's Steamed Lentils (in the refrigerated section at TJ's)

  • Trader Joe's Bruschetta (in the refrigerated section at TJ's)

  • Trader Joes 100% Whole Grain Pita

  • Fresh Basil

  • Shredded Mozzarella Cheese


  1. Preheat oven to 400 degrees.

  2. Mix equal parts lentils and bruschetta in a bowl.

  3. Scoop this mixture on top of a whole grain pita and sprinkle with shredded cheese.

  • The amount of cheese you use totally depends on how cheesy you want it.

  • This pizza is totally yummy without cheese because of the rich flavor of the bruschetta.

  • If you are dairy-free, you could also use a dairy free cheese (my favorite is Daiya).

  1. Place right on the oven rack and heat for 10 minutes until the cheese melts.

  2. Broil on high for the last 1 minute (this makes the cheese melt even more and makes for a crispy crust.

  3. Serve with some fresh basil.
