His & Hers Bruschetta Pasta Bowls

My fiance is a really good eater. So when I made this meal, I cooked up the entire box of Eat Banza pasta. I served myself about 1/5 of the portion and gave him the rest. He ate it all and loved every second (P.S. This was vegan and there was no complaint from my 6'2 athlete). I mean, you could always add some Parmesan or mozzarella but let me tell you, with the strong flavor of the bruschetta, no one misses the cheese. This meal is perfect for a quick weeknight dinner.


  • Banza Chickpea Pasta (high protein chickpea pasta)

  • 1/2 cup Trader Joe's Bruschetta

  • 1/2 cup Marinara Sauce

  • Trader Joe's Frozen Garilc Cube (These are located in the frozen section at Trader Joes. I always have them on hand as they add so much flavor to any dish).

  • Trader Joe's Frozen Basil Cube

  • Fresh Basil

  • Seasoning: Himalayan salt + pepper + oregano.


  1. Begin by bringing a big pot of water to a roaring boil.

  2. Add the Banza Chickpea Pasta to the boiling water and cook for about 8 minutes (using the instructions on the box).

  3. Meanwhile, get out all of your remaining ingredients.

  4. Drain pasta (but keep about 1/4 cup of your starchy cooking liquid as this helps the pasta and sauce bind together).

  5. In the same pot, add your pasta back in, along with the bruschetta, marinara sauce, garlic cube, basil cube and seasoning. Toss to incorporate.

  6. Serve with fresh basil and a sprinkle of olive oil.
