Okay, so I love pizza. And because I love it so much I am always trying to find healthy alternatives that will satisfy my "pizza" tooth. I have tried making cauliflower pizza crust from scratch. If anyone else has tried the same you know that it ends up one way; with a very messy kitchen two hours later with a weird pizza crust that sticks to the parchment paper #facts.
I just discovered the brand, Caulipower. They create already-made, frozen cauliflower pizza crust with very minimal ingredients, no cheese and its even gluten-free! Simply take it out of the freezer, add your toppings and bake at 425 for 15 minutes. I recently made this for my husband and I. I didn't mention it was made from cauliflower because I have learned that would come with a negative preconceived notion. To my surprise, he actually said it tasted better than any other homemade pizza I had ever made. He was in absolute shock it was made out of cauliflower and keeps asking when we will have another Caulipower pizza night.
Caulipower even has three flavored crusts ready to go: Margherita, Veggie or Three Cheese! If anyone ends up trying this product, please let me know what you think!
1 package of Caulipower pizza crust - Store Finderor buy on Amazon
3-5 tbsp pesto
1/2 sliced zuchini
1/5 sliced red onion
1/4 cup green peas
1 kale leaf
Pre-heat oven to 425 degrees.
Heat coconut oil in a pan over medium-high heat.
Add sliced zucchini, red onions and frozen green peas in the pan with coconut oil and cook for about 10 minutes.
While the vegetables are cooking, take the Caulipower pizza crust out of the freezer and place on a baking sheet.
Spread the Caulipower pizza with pesto sauce. Add all of the cooked vegetables to the pizza. Add chopped kale and sun dried tomatoes evenly to the top of the pizza.
Bake in the oven for about 14 minutes or until the edges of the crust are golden brown.
Top with parmesan cheese or nutritional yeast. Enjoy!
