Chocolate Zucchini Breakfast Bowl

Makes: 2-3 servings

Total time: 20 minutes


  • 4 cups grated zucchini (abut 2 large)

  • 1 1/2 cup plant based milk

  • 1/4 cup chia seeds

  • 2 tablespoons cacao powder

  • 2 scoops chocolate protein powder

  • 1 tablespoon maple syrup

  • 1 tablespoon cinnamon

  • 1 teaspoon vanilla extract


  1. Grate the zucchini with a box grater carefully.

  2. Add the grated zucchini into a small stovetop pot along with the chia seeds and almond milk.

  3. Heat the stovetop pot for 10 minutes over medium heat. Stir occasionally so it doesn’t stick to the bottom of the pot.

  4. After about 10 minutes, remove the pot from heat. Stir in the cacao powder, protein powder, maple syrup, cinnamon and vanilla.

  5. I served mine with fresh strawberries, peanut butter, coconut whipped cream, pecans and chocolate chips.

Store in an airtight container in the fridge for about 3 days.
