These avocado fries are crispy on the outside but moist on the inside. They make a great party appetizer, they are fantastic as a healthy side dish to a meal with protein and they even make the best taco stuffers (think avocado corn tacos with lime sauce).
In addition to them being absolutely delicious, they are:
Canola Oil Free
2 large firm avocados
1 cup gluten free breadcrumbs
2 flax egg (2 tbsp flaxseeds + 6 tbsp water)
3/4 cup almond flour
1/4 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon parsley flakes
1/4 teaspoon salt
1/4 teaspoon pepper
Preheat oven to 425.
Set up your dredging station:
Create the flax egg & set aside in a small bowl (this should be set aside for 10 minute to gel).
Add almond flour into a separate small bowl.
Add breadcrumbs and all of the remaining seasoning to another small bowl.
Cut the avocado into wedges. I just cut them halfway the long way, removed the pit, then cut into 3-4 wedges for each half depending on the size.
Line a baking sheet with parchment paper.
Begin assembly: First dip the avocado wedge into the almond flour, then the flax egg then the breadcrumb mixture. Lay on the parchment paper lined baking sheet (repeat with all of the avocado wedges).
Bake at for about 20-25 minutes, flipping half way.
Serve with your favorite dip! I love my Mother Raw Vegan Ranch with the avocado fries!
