I have a quick and easy veggie taco recipe for you! It's non traditional, it contains tons of antioxidants and anti-inflammatory ingredients with the turmeric and spinach.
The greek yogurt makes it creamy and acts as a sour cream. This recipe can be made for breakfast, lunch or dinner. Add eggs, shredded chicken or even black beans for some additional protein!
If you want to make this dairy free, use hummus or dairy free plain yogurt in place of the greek yogurt! This is such a go-to for me and my family on Tuesdays!

Servings: 1 (3 tortillas)
3 of your favorite tortillas, I used these cassava flour tortillas
1/3 cup plain full fat greek yogurt, sub for non-dairy yogurt
1/3 cup chickpeas, drained and rinsed
1/4 cup red onion, sliced
1/4 cup bell pepper, sliced
1/2 avocado, sliced
2 handfuls of spinach, kale would work too
1 tablespoon lemon juice
2 teaspoons olive oil
1 teaspoon everything but the bagel seasoning
1/2 teaspoon salt
1/2 teaspoon turmeric
1/4 teaspoon pepper
Heat the tortillas in a non-stick skillet on the stove on medium/high heat for about 3 minutes each side. Once heated, set aside.
In the same heated pan, add avocado oil, red onion, chickpeas and bell pepper. Cook for about 5 minutes, stirring throughout to cook evenly.
Add the spinach and lemon juice and remove from heat. Allow the spinach to wilt.
Smear a layer of plain greek yogurt evenly on each warm tortilla.
Add the warm filling evenly on top of the greek yogurt.
Add the sliced avocado on the filling.
Sprinkle each with everything bagel seasoning.
