Homemade Simple & Easy Crunchy Granola

Makes: 4-5 servings

2 cups gluten free rolled oats
1/2 cup nuts, chopped
1/4 cup sliced almonds
1/4 cup walnuts
1/4 cup maple syrup
1/4 cup raisins
1/4 cup shredded coconut
1/4 cup coconut oil, melted
1 tablespoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
Pre-heat the oven to 350 degrees.
In a large mixing bowl, combine the oats, nuts/seeds, salt and cinnamon. Stir to combine.
In a separate bowl, mix in the coconut oil, maple syrup and vanilla.
Combine liquid into the oats to coat well.
Add parchment paper to a large baking sheet.
Pour the granola onto a parchment paper lined pan, and use a large spoon to spread it out onto an even layer. Press down with the back of a spoon or a small flat surface.
Bake for about 20-30 minutes, stirring half way.
Let the granola cool completely before breaking it up as it will continue to further crisp and clump up (at least 45 minutes or you could leave it overnight).
Store in an airtight mason jar container. It will stay in the fridge for 4 weeks or store it in the freezer for 3-4 months!
