Crunchy Sweet Potato Breakfast Bowl



Here's a balanced breakfast idea for you! It contains healthy fibers from the sweet potato, healthy fats from the granola (try making your own with my recipe), and protein from the greek yogurt! Try it & tag me on social so I can see it!

Ingredients


Mashed sweet potato

  • 1 sweet potato, medium or large

  • 1/4 cup plant based milk

  • 1 teaspoon maple syrup

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon allspice

  • 1/4 teaspoon nutmeg


Caramelized Banana

  • 1 banana

  • 1 teaspoon coconut oil

Directions

  1. Preheat oven to 425 degrees Fahrenheit. Wash and scrub a large sweet potato well. Poke a few holes in the sweet potato.Place it on a baking sheet. Bake for 45 minutes.

  2. While the sweet potato is baking, heat a non-stick skillet over medium heat. Add the coconut oil, and let it heat up. Once hot, add your sliced banana. Cook for 4 minutes on that side, then flip. You will be left with a caramelized color and flavor. Set aside for topping on your sweet potato bowl.

  3. Once the sweet potato is baked, mix it in a bowl with the almond milk, maple syrup and spices. Mash well to combine.

  4. Serve in your bowl with the yogurt, granola, caramelized banana, peanut butter and cinnamon.
